There are too many do's and don'ts with nonstick pans. They're more trouble than a regular pan.

Nonstick cookware coatings were specifically designed to save time and trouble in the kitchen. By following a few simple guidelines, cooking and cleanup is much easier for everyone with DuPont™ Teflon® nonstick coatings. See Cookware Care for more information.

Nonstick pans should never go in the dishwasher.

We wouldn't be doing our job if you couldn't put all of our nonstick in the dishwasher. While dishwashers are perfectly safe for our nonstick coatings, you should always check the manufacturer's care instructions to make sure the pan itself is dishwasher safe.

You can't store food in the refrigerator in a nonstick pan.

Oh yes you can, with no problems whatsoever.

Nonstick pans are not for serious cooks or chefs.

Major advancements in non-stick technology over the past ten years have elevated nonstick to the performance caliber required by serious cooks and professional chefs. You'll find DuPont nonstick on professional-quality pans, including stainless steel and hard-anodized aluminum. Premium nonstick such as Teflon® Platinum Plus are tailored specifically for the cookware they have been applied to and are durable enough to withstand intense use.

Some cooking techniques, like deglazing, just don't work with a nonstick pan.

There is gourmet cookware now available that features textured bottoms with super-durable nonstick. These pans have either pockets or grooves that hold food residue created by the browning process, which can then be used to deglaze. This is a perfect example of how nonstick cooking surfaces are meeting the needs of even today's most serious cooks.

If a pan has a textured bottom, food can get stuck in the pattern.

You may get attached to your cookware coated with Teflon® quality tested nonstick coatings, but food never will. The superior food release is in no way diminished by these textured surfaces. In fact, these pans can actually extend the performance of a nonstick coating by minimizing the contact between surface and utensils. Nonstick pans with textured bottoms should be treated like any other nonstick pan, and will provide many years of great performance and easy cleanup.

High heat will damage the pan's nonstick finish.

Low to medium-high heat is recommended for cookware with nonstick surfaces. But on occasion, when you need to cook with temperatures up to 500°F, you can do so without damaging the finish. After all, if we couldn't stand the heat, we wouldn't be in the kitchen!

Nonstick pans don't work well for searing foods.

Searing is easily accomplished in a nonstick pan. Simply pre-heat your nonstick pan slowly until it reaches the appropriate temperature, then add the food to be seared.

One scratch and the nonstick pan is ruined for good.

With today's improved nonstick, scratching is much less of a problem to worry about. And even if a minor scratch were to occur, it only affects the appearance - not the cooking or easy cleanup performance - of the pan. To avoid scratching, don't use sharp-edged or metal utensils when cooking. Some of the more durable Teflon® quality tested nonstick coatings like Teflon® Platinum and Teflon® Platinum Plus resist damage from metal utensils with careful use.

I'm still not convinced that particles of nonstick coating won't come off during cooking and get into my food.

Over fifty years of consumer use, along with laboratory testing and published peer-reviewed research, has affirmed that cookware made with Teflon® nonstick coatings is safe for both consumer and commercial use at normal cooking temperatures. DuPont knows how to ensure that our nonstick stays on the pan. Extremely durable, DuPont nonstick is engineered to resist chipping, peeling, flaking, or other kinds of abrasions. What's more, the nonstick coatings themselves are nontoxic, so even if a particle were to be accidentally eaten, it would not be harmful.
