Pineapple Fried Rice


Ingredients:
  • 200g uncooked rice
  • 350-400ml water (until the rice is submerged in water)
  • 200g chicken breast, cubed
  • 3 garlic, diced
  • 2 shallots, diced
  • 50g green peas
  • 20g cashew nuts
  • 20g raisins
  • 100g pineapple, flesh cubed
  • ¼ red pepper, cubed
  • ¼ green pepper, cubed
  • 2 tbsp chives, chopped
  • 2 eggs, beaten
  • 2½ tbsp fish sauce
  • 1 tsp curry powder
  • 3 tbsp oil

Instructions
  • Boil water in Maxim Quattro. Once it is boiled, add in the rice and chicken. Close the Quattro and cook on small fire for 10-15 minutes or until the rice is cooked. Set the rice aside for 1 hour.
  • Clean the Maxim Quattro and add oil on a medium fire. Add red peppers, green peppers, garlic and shallot. Cook until fragrant
  • Add in beaten eggs and cook until they are half cooked.
  • Add in rice, pineapple, cashew, peas, raisins, chicken and chives. Mix well and add fish sauce and curry powder. Taste and add more seasoning if necessary.
  • Serve hot.
